Guppies do not eat plants. The only plants they eat is the algae in the pellet u give them and the occasional algae they swallow.
If u want hardy fast growing plants go with cabomba or hydrilla....

I don't think your tank is stable at all. True i think that monitoring water parameters is sometimes overrated, but not doing waterchange and not even knowing how your filter works is taking it too...
