U can get ammonium bicarbonate from baking supplies shops.
Can also use old filter wool from established fish tanks to kick start the cycling.
Ceramic rings, i usually rinse them with fish tank water once a year to remove the gunk/sludge on the surface. Some will breakdown due to brittleness of the material. Which i then top up with new ones.
