Looking at the underside is about the most effective way to determine the sex. Different colour morph can crossbreed but usually not possible across species unless closely related.

Yes, moulting simply means a change in clothing. However, if there is shell rot, it might not recover immediately. Feeding regime seems ok. Just dun overfeed.

the other thing that I worry is could the undersize crayfish could it be different batch to arrive to the shop and are still babe???
