Quoting from a koi reference book.

" Females have fuller and bigger body which is much prefered over the usually smaller and slender male body. During the first two years of life, male grows faster than females but after this, a female koi can quickly surpass a male in length and girth"

Hope this helps.

Different breed (ie Kohaku, Sanke, Showa, Asagi, Shusui and etc) have different characteristics to look for to deem them as "good" or "quality" koi.

If you put these aside and just look at physical characteristics (choosing potential female and jumbo size), these are some of the characteristics that people look for:-

1.) Long head with a broad snout/mouth
2.) Broad shoulder
3.) The long shoulder (ie from end of the head to the start of the dorsal fin)
4.) Long Dorsal fin
5.) Broad tail tube
6.) Small caudal fin
7.) Broad body height
8.) Visible T bone
9.) Round shape pectoral fins (choosing for female)

The above list is not exhaustive and likely to have more pointers.

Giant Koi (aka Jumbo) are from the same parents as normal koi. In every batch of fries (assuming they are are from pedigree parents), there will be some that will grow bigger and longer (more than 80cm) than the others when they mature. The Japanese Koi breeders know the bloodline of their fries and can identify (with certain accuracy) which fries can grow to Jumbo size and which can't. They will keep these Jumbo potentials in mud ponds to sell them at higher price later. Not easy for hobbyists like us to identify when they are young, say 10-20cm.

I don't know whether this helps -

A very fair chinese girl with 林黛玉 jade like skin is Soft Shiroji.

An Ang Mo white woman is White Shiroji.

I go for Soft Shiroji
