Very nice. Just a question. We do need to reset the tank every 2 years, so it means we need another tank to house the Shrimps while the other one is resetting right?

It all depends if your soil is still able to buffer the ph in 2 yrs time.
Don't think so far. Just enjoy your current setup. Maybe before 2 yrs u already upgrade to bigger tank.

Do we really need fertilizer n supplement for a shrimp tank since we are not planting? Like those ADA products you have used.

If u are keeping shrimps without any plants then fert and supplement are not necessary.
Those ADA products I am using are mainly for bio filtration.
